I would like to make a gel with glucosamine sulfate and chondroitin sulfate instead of oral administration

Indeed I do not know any liquid forms with these products. There are also no stability data available. Interaction with Carbopol I certainly expect if only because of the high dosage.

Result: It was the intention of making an oral gel, to improve the issue of dosing and pouring out. I have tried it in the meantime: indeed the gel does not break but it does not flow. Diluted with half sugar syrup gives this a nice and acceptable consistency, but the taste is less... (This problem will also occur with the pouches forming on the market).
